The owner first started making Okinawa soba when he returned to Okinawa after 30 years away. He was shocked to find that the taste of Okinawa soba, which he had grown up with, had changed so much, and this was the starting point for his decision to “make really delicious Okinawa soba with my own hands”.
The noodle-making technology that was honed for 30 years in the home of Sanuki udon was put to good use here. Based on years of research and technology, we developed “two-stage mature noodles” that are left to mature for two days, a process that cannot be experienced anywhere else. The repeated maturation process brings out the full flavor of the wheat and gives the noodles a chewy texture with a springy bite.

Our popular “V3 Soba” is a luxurious bowl of noodles that is irresistible to Okinawa soba lovers.
It comes with three different luxurious toppings – pork belly, pork rib, and pork rib cartilage – so you can enjoy the different textures and flavors all at once. The meat has been slowly stewed until it is meltingly tender in your mouth. It also goes perfectly with the double-aged noodles.

The first in Okinawa! Frozen Okinawa soba developed
The owner is a craftsman who developed the first “frozen Okinawa soba” in Okinawa.
With the aim of making Okinawa soba more widely available to a wider range of people by enabling it to be stored for longer, he has achieved a shelf life of 120 days. This has also helped to reduce waste and promote the careful use of ingredients.
At present, the company is expanding sales of its frozen noodles not only in Okinawa but also outside the prefecture. The aim is to deliver “Okinawa soba that can be enjoyed in its authentic form without having to go to Okinawa” to people all over the country.
