Attention to detail in making soup stock

Lightly flavored
We have carefully and lovingly prepared this soup using a base of pork and chicken bones, bonito flakes, kelp and other secret ingredients. The dashi is made by taking the ingredients

Rich flavor
Pork bones and chicken bones are added to the soup, along with three types of soup stock bones (these three types are the miso), and the mixture is slowly simmered for half a day while removing any scum that forms. If the heat is not adjusted properly or the scum is not removed, the soup will discolor and develop an unpleasant taste. It is a very delicate soup.
The white, odorless soup is surprisingly light, but it is full of collagen.
The collagen soup, which is unique to Yonabaru-ke, is also recommended for female customers, the elderly, and children.

Attention to detail with noodles

We use our own homemade noodles. We couldn’t be satisfied with the taste, flavor, texture, smoothness, and compatibility with the soup of the noodles on the market, so we decided to make our own. Our craftsmen, who have been working in the Japanese and Okinawan food industries for many years, are committed to making the best noodles possible.

Attention to detail from preparation to serving customers

The tender pork belly is stewed in a secret sauce that has been passed down for over 30 years.
The thick pork belly and melt-in-your-mouth pig’s feet are full of flavor.
We serve Okinawa soba noodles, which are made with a special type of curly noodles that go perfectly with the soup.
